In terms of fish, Portman’s serves the freshest seafood including lobster, crab cake (pictured), ocean trout, black cod, halibut and the signature Salmon. The salmon comes from China’s Sichuan Rivers directly to the table. In the area rebuilt after Sichuan Earthquake in 2008, sustainable mountain spring salmon is raised for three years until matured, and never leaves their fresh water environment to swim in the ocean – therefore giving them a unique crisp and fresh flavor.

More than just super fresh sushi and sashimi, Hatsune prides itself on its diverse seafood and shellfish selection. From fresh oysters flown in from France, New Zealand, Australia and the west coast of the U.S., each of the oysters they have on their menu has been chosen for their smooth and balanced flavor. Specializing in both salt roasting (the more traditional Japanese form of grilling) and nimono or braising fish (in sake, soy, sugar and mirin), one of their must-try seafood dishes is the Kinki fish. Known by some as “thornyhead fish”, it’s even been referred to as “idiot fish”, but Kinki is a rare, deep sea ocean fish of the snapper family with a life span of over a century (some reach the ripe age of almost 150 years!).
