The building blocks of a burger – bun, patty, vegetable, condiment, and cheese – are simple enough that the dish is ripe for remixing. And people do, as these Shanghai restaurants show. From croissant to Fritos, spaghetti to charcoal, watch this video of seven outrageous burgers (QQ link for those in China) found around town, then read on for a closer look at how they get brazen with their ingredients.
OH.MY.BURGER! are at it again with their noodle bun. This time, they’re using pasta for their Italian-inspired Ciao, Bello! burger. The bun is made from spaghetti with marinara sauce, and in between is an Australian beef patty seasoned with Italian herbs, plus radicchio, zucchini, Gremolata dressing, and pancetta. Mozzarella tops this winner off.

The French Burger
Burgers may be as American as they come, but French bakery Bread etc is challenging that notion with The French Burger. Regular buns are jettisoned for a croissant, and roasted baby potatoes stand in for fries on the side. To really show who’s boss, a French flag is stabbed on top.

Frito Pie Chilli Cheese Burgerito
This burger is next-level Tex-Mex: part fast-food style gordita – a flour tortilla wrapped around a stuffed corn tortilla, and part Frito pie, made up of chilli, cheese, and Frito corn chips. Enter the Frito Pie Burgerito, which combines chilli, Frito chips, cheese, ground beef, and pickle de gallo (pico de gallo with pickles). It’s cooked like a burger, wrapped in a corn tortilla, then once more in flour tortilla.

Outstanding Wagyu CHAR Beef Burger
Yes, it has a price tag of over ¥300, and yes, only five to seven orders are prepared each day, but here’s why. It’s made from three different wagyu cuts – brisket, M5 rump, and Blackmore M9+ trimmings – and topped with grilled foie gras. Outstanding indeed.

Wagyu Portobello Cheese Burger
Mushrooms in burgers tend to come in slices, but Deli Boys is shoving an entire cap in theirs. Specifically, a full head of portobello mushroom, sitting over cheese and a wagyu patty, and encased between a challah roll.

It’s big, it’s black, and it’s very bold. The 1KG Burger started out as a joke among friends of the chef, but curious customers turned it into a staple on the menu. It’s made by combining eight to ten patties that needs to be flipped with two spatulas, engulfed between two black sesame and bamboo charcoal buns. For what it’s worth, bamboo charcoal supposedly aids with digestion, which will be sorely needed after eating this.
